This stunningly original series joins​ world-renowned chef Analiese Gregory, as she takes the biggest risk of her life - leaving her restaurant career for a century-old cottage at the bottom of the world, in Tasmania, Australia.

Here, she strives to forge a new life for herself - learning to hunt, fish, forage and live seasonally closer to nature.

Analiese is determined to bring some wildness into her life, and she’s given herself a year to see if she can make her wild adventure work. 

Over a year like no other,​ we share her journey of discovery. With the help of her new local community, will she learn the skills she needs… before the wild southern winter begins?

 

Episode 1

Analiese Gregory prepares for her first Spring in her new Tasmanian home by receiving a very personal ‘Welcome to Country’ ceremony from First Nations elder, Aunty Kris Schaffer. With the help of new friends and neighbours, she learns to shoot, and goes on an overnight fishing adventure, before laying down roots in her new native garden.

Episode 2

Analiese makes the most of Spring and discovers it’s a very busy time of year, here in one of the southernmost parts of the world. She harvests seaweed and begins building her pantry, before beginning a kitchen garden, with the help of Californian organic garden guru Tony Scherer. She also dives for wild scallops with local seafarers Chris and Mikey, at a secret location.

Episode 3

Analiese embarks on a new venture, with her neighbour Al, and gets two piglets to raise for meat. She confronts her fear of bees and harvests wild honey in the mountains of Tasmania with French bee-whisperer extraordinaire, Yves Ginat, before embarking on a solo trip to Lake Pedder to go fly-fishing for her first wild trout.

Episode 4

Conquering her fear of bees, Analiese gets her first beehive before heading off on a summer camping adventure with one of her best friends and famous Thai restaurateur, Palisa Anderson. Analiese takes Palisa to pristine Satellite Island to forage, find lobster, and experience her first abalone dive.

Episode 5

With summer in full force, Analiese tackles the ups and downs of her new life. She heads back to Bruny Island for her first wallaby hunt with friend and wallaby-hunter, Richard, before cooking up a very different BBQ. She returns home to find that feral rabbits have decimated her new vegetable garden – and calls in local ferreters Shauna and Adrian Pickin to help. With the rabbits they catch, and some potatoes salvaged from the garden, she conjures up a delicious cider-braised rabbit dinner.

Episode 6

Analiese faces her biggest challenge yet: slaughtering the two pigs she’s reared for meat. She makes sure nothing goes to waste, by using their blood to make morcilla (Spanish blood sausage) with the help of her friend and neighbour Bruce. Analiese is cheered up by visits from friends from her old life on the mainland, including cook and writer, Adam Liaw. She takes two of her closest chef friends, Jo Barrett and Alanna Sapwell, on a girls’ own fishing adventure, along the wild east coast of Tasmania.

Episode 7

Enjoying the bounty of Autumn, Analiese harvests blackberries and makes rooster stock with a rooster she reared on the farm, and spins the first of her honey from her beehive. She has also got her gun license, and goes on her first hunt, shooting deer for venison, with a fellow female hunter as a guide. Analiese is also visited by her former boss and mentor, Australia’s leading chef, Peter Gilmore and takes him foraging for wild mushrooms.

Episode 8

Analiese settles in for winter and makes a big decision about her future, transforming the derelict vet clinic attached to her cottage into a new commercial kitchen space. She puts together a winter meal for her new friends and community, kayaking to a native oyster farm, and preparing a feast to celebrate a year of adventures.
