Ramen fried rice

This quick snack is popular among shop owners in Seoul’s Euljiro district and found its fame through a Korean TikTok creator.

Both ramen and fried rice are considered quick, simple and affordable meals. But what happens when you put them together?

Tina Choi, a Korean TikTok creator . While shopping with her mother they found a small corner shop in the Euljiro district that serves the dish to hungry nearby workers. You choose ramen from the shop's shelves, and the owner will break up and cook the noodles, then fry them with the seasoning, an egg and some rice. Before serving, the ramen container is drizzled with sesame oil and toasted sesame seeds before the hot ramen rice is packed back in, then turned out onto a plate for presentation.

Tina recreated this recipe for her blog, , and I couldn’t resist trying it out. You can use any flavour ramen you like and if yours doesn’t come in a tub already, just use a small bowl to pack it in and turn out for presentation.

How to make ramen fried rice

Take:

  • 1 packet instant noodles of choice
Break up the noodles into small chunks and set the seasoning packets aside.

Place a medium frypan over medium heat and heat a little neutral oil. Add the noodles and fry until toasted, about 2 minutes. Set aside.

In a separate bowl, combine:

  • 1 cup cold leftover rice
  • 1 egg
And the instant noodle packet seasoning and mix well. Place the same frypan back over medium-high heat then add the rice and toss to heat through and cook the egg. Add back most of the crunchy noodles, reserving a few spoonfuls for garnish, and cook for a further minute or two.

In your ramen cup or a small, clean bowl add:

  • 1 tsp sesame oil
  • ½ tsp toasted sesame seeds
Plus the reserved crispy noodles. Fill the cup or bowl with the hot fried rice and gently pack down. Turn out onto a plate to serve.
