“When you’ve got cancer and are going through chemotherapy, the last thing you want to think about is food. You don’t generally have much of an appetite. And the truth is the act of eating can sometimes be draining, especially after the first few days of chemotherapy. But I still need to eat,” says Nikki Ebenezer, who is using wholesome food as an opportunity to feel stronger through her cancer experience.

"When we changed the business we thought we were only going to cook for Peruvians. Now we're cooking for South Americans who love Peruvian food – Chileans, Colombians, pretty much all Latino people and customers who want to try new things," says Orihuela.
