Start the day with a bright and colourful smoothie bowl. It’s a delicious way to pack in lots of nutrients first thing in the morning.

Ingredients

  • 2 bananas, 1 roughly chopped and frozen, 1 whole
  • 200 ml coconut milk
  • 1 dessert apple, roughly chopped
  • 2 tbsp chia seeds
  • 400 g mixed berries (e.g. blueberries, raspberries and strawberries)
  • filtered or spring water
To serve
  • 2 tbsp mixed seeds
  • 2 tbsp coconut chips

Instructions

Place the frozen banana, coconut milk, apple and chia seeds in a blender or food processor. Tip in the berries, saving a few for decoration. Blend the mixture until smooth, adding a little water if it is too thick.

Divide the smoothie between two bowls and scatter over the remaining berries, mixed seeds and coconut chips. Slice the remaining banana and arrange around the other toppings before serving.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
