Canadian butter tarts

You can't get much tastier, or easier, than this recipe for Canadian butter tarts. It's a delicious mix of sweet syrup and pecans piled into crisp tart shells, and you'll be pressed to stop at just one.

Ingredients

  • 1 cup pecans
  • ½ cup butter, melted
  • 1 tbsp corn syrup
  • ¼ cup (60 ml) Canadian maple syrup
  • ¼ cup brown sugar
  • 1 egg, lightly beaten
  • ¼ tsp vanilla extract
  • ½ tsp spiced rum
  • 10 mini tart shells
  • 1–2 tbsp icing sugar, to dust

Instructions

  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. Roughly chop pecans and place in a bowl. Add butter, corn syrup, maple syrup, brown sugar, egg, vanilla extract and spiced rum. Gently stir until ingredients come together.
  3. Spoon mixture into tart shells and place on prepared tray.
  4. Bake for 10 minutes, or until golden. Cool slightly. Dust with icing sugar before serving.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
