These are packed with my favourite nuts and seeds. Making your own bars is easy, and much more affordable than buying them.

Ingredients

  • 100 g sunflower seeds
  • 50 g pumpkin seeds (pepitas)
  • 100 g chopped almonds
  • 50 g chopped pistachios
  • 50 g shredded coconut
  • 60 g dried cranberries
  • 1 tsp salt flakes
  • 180 g honey

Instructions

  1. Pre-heat oven to 180°C.
  2. Mix all the ingredients in a medium mixing bowl
  3. Heat honey in a small saucepan or in the microwave until runny. Pour over the nuts and combine well
  4. Pour mixture into a lined rectangular slice tray and bake for 20 minutes.
  5. Cool, then cut into bars. You could decorate these by mixing some yoghurt and icing sugar and drizzling over the bars.

Cook's Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
