These quantities are approximate; you can easily halve the recipe to make a solo sub, or adjust the amount of cheese and sauce to suit your tastes.

Ingredients

  • 6-8 leftover meatballs
  • ½ cup fresh basil
  • ¼ cup (60 ml) olive oil (approximately, you may need more or less)
  • 1 hoagie roll (or other long white bread roll)
  • 20 g (about 1½ tbsp) butter, melted
  • 1 tsp garlic salt
  • ½ cup marinara sauce (see Note)
  • ¼ cup shredded mozzarella
  • 1 tsp chopped parsley

Instructions

  1. Preheat the oven to 190°C (375°F). Warm leftover meatballs for approximately 15-20 minutes.
  2. While meatballs are warming, blend fresh basil and olive oil in a food processor (more or less as needed to create a pourable consistency) and set to the side.
  3. Brush melted butter with garlic salt onto a hoagie roll.
  4. Add meatballs, approx. 3-4 to the roll, top with marinara and a generous amount of mozzarella.
  5. Grill sub (in oven or grill) just until cheese is bubbly and slightly brown, approx. 2-3mins.
  6. Serve with a drizzle of basil oil and freshly chopped parsley.

Note

• In America, marinara generally refers to a simple tomato sauce with garlic, onion and herbs, and sometimes other additions. In Australia, we often use the term marinara to refer to a pasta dish made with seafood, but jars of marinara pasta sauce, without any seafood. like the one used in this recipe, are also sold here. You can use any jarred or homemade tomato pasta sauce in this recipe.

Cook's Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
