Reflecting Swahili culture with its Indian, Mediterranean and Middle Eastern influences, this hummus is great for entertaining.

Ingredients

  • 3 cloves garlic
  • 2 tsp tahini paste
  • 2-3 pieces sundried tomato
  • 1 can chickpeas, drained
  • ⅓ cup olive oil
  • Pinch of salt
  • Juice from half a lemon
  • Ground cumin, to taste
  • Ground clove, to taste
  • Flatbread or vegetable sticks, to serve

Instructions

  1. Put all the ingredients into a blender or food processor and blend until fairly smooth. If too thick, loosen with a small amount of water or more olive oil.
  2. Serve with chapati, naan bread, pita or vegetable sticks.  

Cook's Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
