Host a fiesta in a flash with these easy Mexican and Latin American recipes

Looking for something easy and entertaining? Here are a collection of classic and inspired dishes that are easy to pull together when cooking for a crowd.

These tacos are made with tender, smoky chicken marinated with spices and chipotle hot sauce. The chicken is grilled and topped with a cherry tomato pico de gallo. With a dollop of zesty guacamole, these tacos make for a delicious and easy weeknight meal.

This is Adam's interpretation of fideo seco or Mexican spaghetti, a beloved comfort food in Mexican households made in just half an hour. The angel hair pasta is broken and fried, before a smooth blend of tomato, onion and garlic sauce is poured. Served with crumbed feta, avocado and sour cream, this one is a sure crowd-pleaser.

This may not be an authentic quesadilla, but the combination of corn and kewpie mayonnaise will make this so addictive that kids will be running to the dining table in no time. Perfect for an afternoon snack, or for an easy meal for the family to enjoy.

Lamb barbacoa with consomé, salsa verde and tortillas

This is one of Mexico's most traditional dishes, originally from the city of Hidalgo in Pachuca. Traditionally these are cooked in a pit covered with banana leaves, but here, a deep roasting tray is lined with banana leaves before lamb is covered in the marinade. Chef Alejandro Huerta says this was his mum's favourite dish to eat on Sundays with the family.

Picadillo

Picadillo is one of the earliest examples of fusion cuisine, tying in Latin American flavours with Filipino staples. This is Danielle Alvarez's recipe from her childhood, with layers of spices such as cumin, cinnamon and nutmeg. Served with steamed white rice and either sweet "platano maduro” or tostones. This one is a home cook's comfort recipe.

Mexican prawn cocktail, also known as Coctel de Camarones, is a refreshing and delicious appetiser that is popular in Mexico. You can add other seafood such as oysters, clams, and cooked octopus. This one is sure to entertain and impress.

This is a super easy Mexican brekkie of fried corn tortilla, pieces, eggs, coriander, feta and avocado, perfect to surprise your loved one for the weekend. Add a few drops of Tabasco for extra kick.

Baked enchiladas are "super easy to make and everybody loves and craves them!" says Rosa Cienfuego. This cheesey-comfy dish can also be made using leftover roast chicken as well.

This recipe uses smoked paprika and cumin for the smoky element common in Mexican cuisine – and jalapeno to bring the heat. Be sure to get a couple of extra cervezas (beers) to serve with these mussels!
