Autumnal jar dressing

Toss through a spinach, radicchio, sliced apple and toasted pecan salad. This also doubles up as a great roast veg dressing that you add 5-10 minutes before your bake finishes.

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 2 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Combine all ingredients in a jar and shake well. Keep refrigerated until ready to serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
