Cacio e pepe slice

This dish brings together the classic flavours of Italian cacio e pepe (cheese and pepper) pasta with the Australian love of a slice. It's easy to make and is perfect served with some dressed salad leaves.

Ingredients

  • 100 g (1 cup) grated parmesan
  • 500 g zucchini
  • 1 large onion
  • 5 eggs
  • 150 g (1 cup) self-raising flour
  • 100 g (1 cup) grated tasty or cheddar cheese
  • 1 tbsp coarsely ground black pepper, plus extra to serve
  • 50 g melted butter, plus extra for greasing
  • green salad leaves, to serve
Cooling time: 20 minutes

Instructions

  1. Preheat the oven to 180˚C (fan-forced 160˚C). Butter a 20 cm x 30 cm lamington tin and scatter the base with ¼ cup grated parmesan.
  2. Peel the zucchini to remove any green parts. Using a box grater, grate the zucchini and onion into a large bowl. Add the eggs, flour, cheese, pepper, melted butter and ½ cup parmesan and stir to combine well. Press into the tin and scatter the top with the remaining parmesan. Grind over a little more black pepper.
  3. Bake for 30 minutes or until the slice is set. If you like, grill the top until lightly browned. Allow the slice to cool for about 20 minutes before slicing. Serve with dressed salad leaves.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
