Caramel apple strudel

This strudel will hit any homemade apple pie craving, and without all the fiddling with pie tins and pastry making. Simply top filo pastry with a spiced apple filling, then wrap it up snugly like a burrito and bake. The filo also adds a light and flaky element.

Ingredients

  • 4 Granny Smith apples, peeled, cored and thickly sliced
  • 150 g (¾ cup) soft brown sugar
  • 85 g (½ cup) dried sultanas
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ tsp vanilla extract
  • a good pinch of salt
  • 6 - 8 sheets filo pastry
  • 100 g melted butter
  • icing sugar, for dusting
  • vanilla ice cream, to serve

Instructions

  1. Preheat a fan-forced oven to 180˚C. Place the apples, sugar, sultanas, cinnamon, nutmeg, vanilla and salt in a bowl and mix to combine.
  2. Lay a sheet of filo on a baking paper-lined baking tray and brush liberally with butter. Top with another sheet of filo and brush again with butter, then repeat with the remaining filo and butter.
  3. Pile the apple mixture along one long edge and roll up, tucking in the edges to form a single large roll, ensuring the seal is on the bottom. Brush with more butter and bake for 30 minutes until golden brown.
  4. Dust with icing sugar and serve with vanilla ice cream.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
