Crab, celeriac and apple lettuce cups

This combination of blue swimmer crab with a creamy mayo dressing, crunchy celeriac and tangy apple delivered in crispy lettuce cups is seriously joyful. If celeriac isn't in season, you can easily use avocado instead.

Ingredients

  • ¼ bulb celeriac
  • 1 green apple
  • 3 tbsp Kewpie mayonnaise (home-made is even better)
  • 1 tsp Dijon mustard
  • salt and pepper, to taste
  • 1 lemon, juice and zest
  • 200 g cooked blue swimmer crab meat (see note)
  • baby cos lettuce leaves, (about 2 per person)
  • ½ bunch chives, thinly sliced
Serves 6 - 8 as a starter.

Instructions

  1. Peel the celeriac and slice very thinly on a mandolin. Place the slices on top of one another and cut into matchsticks to make a thin julienne. Repeat with the apple, peeling beforehand if desired.
  2. Mix the mayonnaise, mustard, salt, pepper, lemon zest and juice together to form a creamy dressing.
  3. Place the crab meat, celeriac and apple in a large bowl and add the dressing. Stir to combine, then spoon into the baby lettuce leaves, sprinkle with chives and serve.

Note
• Catching, humanely dispatching, cooking, and peeling crabs adds to the hunter-gatherer experience, but is not available to everyone. Fresh ("green") or cooked blue swimmer crabs are available from good fishmongers as is the picked crab meat, but freezing either green or cooked crab destroys the texture and flavour so it's better to avoid this and use decent prawns instead.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
