Dreggy jar dressings

Instead of rinsing out those last bits from your jars of spreads, you can add some extra ingredients to the jars and shake them up for resourceful dressings, sauces and stocks.

Ingredients

Perpetual satay salad sauce
  • 1 jar peanut butter dregs (with at least 2 tbsp peanut butter)
  • 1 tbsp tamari (or 1 tbsp miso mixed with hot water)
  • 1 tbsp apple cider vinegar (or lemon or lime juice)
  • 1 large pinch sweet paprika, cayenne pepper or chilli powder
  • 2 tbsp extra virgin olive oil
Cheat's ranch dressing
  • I jar mayonnaise dregs (with at least 2 tbsp mayo, see note)
  • 1 tsp mustard (any kind)
  • 1 tbsp apple cider vinegar
  • 1 pinch sweet paprika or smoked paprika
  • 1 tsp finely chopped fresh herbs and/or minced garlic (whatever you have - chives, parsley, tarragon, celery leaves)
  • sea salt and ground black pepper, to taste
  • baby gem lettuce leaves, to serve
Vegemite stock
  • 1 jar Vegemite dregs

Instructions

  1. For the Perpetual satay salad sauce, place all the ingredients in the peanut butter jar, seal and shake to combine well. If the mixture doesn't combine easily, pop the jar in the microwave or run under hot water for about 30 seconds. You can use this dressing hot or cold. It's particularly good with roast vegetables and grain salads.
  2. For the Cheat's ranch dressing, place all the ingredients in the mayonnaise jar, seal and shake to combine well. Serve with baby gem lettuce leaves.
  3. For the Vegemite stock cubes, pour enough hot water into the Vegemite jar to come 2 cm below the rim. Seal and shake well to combine. If you don't need it straight away, pour into ice cube trays and freeze. Great for adding a boost to soups and stews etc.

Notes
• Like your satay salad sauce creamy? Add 80 ml (⅓ cup) coconut cream and microwave for 30 seconds before shaking. To make the satay sauce perpetual, you can keep in the fridge for 2 – 3 months and keep the jar going by adding extras until all the peanut butter is used up.

• If you don't have enough mayo left in the jar for the cheat's Ranch dressing, simply pad out with a little yoghurt, sour cream or mashed avocado.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
