Gingerbread apple crumble

Because you can never have too many crumble recipes, this one stands out for its crust of aromatic spices – ground ginger, cinnamon, cloves and cardamom.

Ingredients

  • 2 kg mixed apples, half peeled, cored and cut into 2 cm chunks
  • 50 g soft brown sugar
  • 50 g caster sugar
  • 1 lemon, juiced
  • 2 tbsp brandy or dark rum (optional)
  • vanilla ice cream, to serve
Crumble
  • 200 g cold unsalted butter, cubed
  • 150 g soft brown sugar
  • 60 g golden syrup
  • 300 g wholemeal flour
  • 1 tsp ground ginger
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp flaked sea salt
  • ¼ tsp ground cloves
  • ¼ tsp ground cardamom

Instructions

  1. Preheat a fan forced oven to 200˚C.
  2. For the crumble mixture, place the ingredients in a food processor and process to a rough crumble. You can rub the sugar through the other ingredients in a bowl with your hands if you prefer.
  3. Combine the apple with the sugars, lemon juice and alcohol in a saucepan over medium heat and cook for about 5 minutes or until the apples are warm and slightly softened. Transfer to a baking dish and top with as much of the gingerbread crumble topping as you like.
  4. Bake for 25–30 minutes and serve with ice cream.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
