Homemade pizza

Although making your own pizza base is a little more effort than buying a ready-made base, it can be fun and interactive activity with kids or guests, and is worth it for the final flavour and texture.

Ingredients

  • 450 g (3 cups) strong (00) flour, plus extra for dusting
  • 7 g (1 sachet) instant yeast
  • 300 ml warm water
  • fine salt, to taste
Pizza sauce
  • 3 tbsp tomato paste
  • 2 tsp tomato sauce
  • pinch dried basil
  • pinch dried oregano
  • ½ tsp sugar
  • extra virgin olive oil, for drizzling
Toppings
  • prosciutto
  • olives
  • crumbled cheeses (try washed rind, soft blue or marinated feta)
  • basil leaves
Resting time: 30 minutes

Instructions

  1. Preheat the oven to 220˚C. Place 2 heavy–based baking trays in the oven to preheat.
  2. For the pizza dough, place the flour, yeast and warm water in the bowl of an electric stand mixer fitted with a dough hook. Knead on low speed until the dough comes together, then add a pinch of salt and mix again.
  3. Transfer the dough to a lightly oiled bowl, cover and stand in a warm place for 20 – 30 minutes or until doubled in size.
  4. Meanwhile for the pizza sauce, combine all the ingredients in a bowl, then drizzle with olive oil.
  5. Knock the air out of the dough and transfer to a lightly floured work surface. Cut the dough in half, then roll out each half into a thin round. Place on a piece of baking paper and prick the dough with a fork. Transfer the dough on the paper to the preheated baking trays and bake for 8 – 10 minutes to par cook them.
  6. Remove the pizzas from the oven, brush with olive oil and the pizza sauce, then scatter with the toppings. Bake for another 10 minutes or until golden.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
