Marinated vegetable skewers

The key to these skewers is slicing everything very thinly. Big chunks of vegetable will cook too slowly on the barbecue, but when they're thinly sliced they will carry more of the marinade and cook more evenly.

Ingredients

  • 3 new potatoes
  • a few leaves cabbage
  • a few leaves red cabbage
  • 1 red capsicum
  • 1 yellow capsicum
  • 6 button mushrooms, stalks removed, caps sliced in half horizontally
  • 1 Japanese eggplant, cut into ½ cm slices
  • 1 zucchini, cut into ½ cm slices
  • 1 red onion, cut into 2 cm chunks
  • 20 cm bamboo skewers, soaked½ lemon, juiced
  • 2 tbsp mixed olives
  • 1 tbsp red wine vinegar
Marinade
  • 1 cup (250 ml) extra virgin olive oil
  • sprigs of fresh parsley and oregano, roughly chopped
  • 2 sprigs rosemary
  • 3 sprigs thyme
  • 2 bay leaves
  • ½ lemon, zested
  • ½ tsp chili flakes (optional)
  • salt and black pepper

Instructions

  1. Microwave the potatoes for about 5 minutes until cooked. Cool, then slice into ½ cm slices. Cut the cabbages and capsicums into pieces around the same size as the slices of zucchini, eggplant and potato.
  2. Thread the vegetables onto 20 cm skewers (except the olives), covering about ¾ of the skewer and pushing the vegetables close together so they support each other in cooking.
  3. Mix the marinade ingredients together and pour over the vegetables in a small baking tray.
  4. Heat a chargrill pan or barbecue over medium heat and grill the skewers for 5-10 minutes, or until lightly charred. Pour the leftover marinade oil into a small bowl and combine with the lemon juice, olives and vinegar. Season with a little salt and pepper.
  5. Spoon the dressing and olives over the skewers to serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
