Mozzarella mash

This mozzarella mash is a real crowd-pleaser and a spin on the classic family favourite, bangers and mash. While there are many types of mozzarella available at the supermarket, you’ll want the hard, aged mozzarella balls that grates easily, rather than the softer balls of fresh mozzarella which are typically used for salads or pizzas.

Ingredients

  • 1 kg Desiree potatoes
  • Salt, to season
  • 50 g butter
  • 150 g crème fraiche
  • 250 g tasty cheese, grated
  • 250 g mozzarella cheese, grated
  • 4 sausages, cooked to serve
  • Green salad, to serve

Instructions

  1. Peel the potatoes and cut into large chunks. Place the potatoes into a large saucepan and cover with cold water. Season the water with a generous pinch of salt, then bring to a boil over high heat. Reduce the heat to a simmer over medium heat. Cook for 20-30 minutes, or until a small knife can be inserted into the potato chunks and removed easily.
  2. Drain the potatoes into a colander, then return the pan to low heat. Use a potato ricer to crush the potatoes directly into the pan. Add the butter and crème fraiche and use a spatula to combine well. Add the grated cheese gradually, beating well after each addition, until the cheese is melted. The mixture should be stretchy and smooth.
  3. Season the mozzarella mash well with salt, to taste. Serve the mash with cooked sausages and a green salad, to your liking.
