Parmesan rind crisps

Stop throwing away those hard, inedible rinds from hard cheeses like Grana Padano or Parmigiano-Reggiano. Just chop them up and turn them into light, airy cheese crisps.

Ingredients

  • 1 piece leftover parmesan cheese rind

Instructions

  1. Wash, dry and roughly chop up the leftover parmesan cheese rind into chunks. 
  2. Space them out on a plate and microwave for 60 seconds. The rind will melt and puff up. Let cool before eating.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
