Pizza toast

Thick toast slices topped with plenty of cheese, cabanossi, capsicum and tomato pizza sauce, this one's an easy, lazy dinner or quick snack.

Ingredients

  • 4 slices thick white bread, halved
  • 250 g (2 cups) grated mozzarella cheese
  • 1 green capsicum, cut into thin rounds
  • 1 stick cabanossi, thinly sliced
  • 25 g (¼ cup) grated parmesan cheese
  • basil leaves, to serve
Pizza toast sauce
  • 250 ml (1 cup) tomato passata
  • 60 ml (¼ cup) tomato sauce
  • salt, to taste

Instructions

  1. Preheat the oven grill to high. Mix the sauce ingredients together, then spread over each slice of bread, right to the edges. Top with the mozzarella, the top with the capsicum and cabanossi.
  2. Place under the grill and cook until the cheese is bubbling. Scatter with grated parmesan cheese and basil and serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
