Quick apple crumbles

These cute and easy individual crumbles are topped with a toasty mixture of oats, almonds and coconut oil. Adding cloudy apple juice to the apple base amplifies their flavour.

Ingredients

  • 2 small granny smith apples
  • 2 tsp pure maple syrup
  • ¼ tsp ground cinnamon
  • 2 tbsp cloudy apple juice or water
  • crème fraiche or yoghurt or ice cream, to serve
Crumble
  • 50 g (⅓ cup) rolled oats
  • 2 tbsp almond meal
  • 2 tbsp toasted flaked almonds
  • 2 tsp pure maple syrup, plus extra to serve
  • 2 tbsp melted coconut oil
  • ½ tsp ground cinnamon
  • pinch sea salt

Instructions

  1. Preheat the oven to 200˚C (fan-forced 180˚C).
  2. Peel the apples, cut into a small dice (about 1.5 cm) and place in a bowl. Add the maple syrup, cinnamon and apple juice and stir to combine. Spoon into 2 small ramekins and press down to compact the tops.
  3. For the crumble, place all the ingredients in a bowl and stir to combine well.
  4. Spoon the crumble mixture on top of the apples. Bake for 20 - 25 minutes or until the tops are golden.
  5. Drizzle with a little maple syrup and serve with crème fraiche, yoghurt or ice cream.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
