Ingredients

  • 1 long cucumber, halved lengthways and seeded
  • sea salt flakes, to taste
  • 100 g softened salted butter
  • 8 semi-frozen slices wholemeal bread
  • 300 g fresh goat cheese with dill
  • 300 g sliced smoked salmon
  • 2 tbsp baby capers, rinsed and drained
  • 1 tbsp chopped dill, plus extra sprigs to serve
  • salt and pepper, to taste
  • lemon wedges, to serve
Serves 4 as part of a high tea.

Instructions

  1. Ensure all the seeds are removed from the cucumber, then sprinkle the cucumber halves with salt. Press the cucumber between 2 sheets of paper towel to extract any excess water. The aim is to reduce as much moisture as possible as you don't have soggy sandwiches.
  2. Butter each slice of bread. Spread the goat cheese generously over 4 slices of bread. Top with a layer of smoked salmon and cucumber, a sprinkling of capers and finely chopped dill, then season with salt and pepper.
  3. Top with another slice of buttered bread. Trim the crusts and cut diagonally to produce 4 triangles each. Plate and serve with a lemon quarter and sprig of dill.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
