Ingredients

  • 6 corn tortillas, taco size
  • oil, for brushing
  • 6 sausages
  • coriander sprigs, to serve
Pickled onions
  • 1 red onion, julienned
  • 100 ml white wine vinegar or rice vinegar
  • 1 tbsp sugar
Salsa
  • 3 tomatoes
  • ½ brown onion
  • 2 garlic cloves, peeled
  • 4 red chillies
  • 3 chipotle chillies (canned)
  • 1 tsp ground cumin
  • 1 tbsp oregano
  • 1 tsp sugar
  • 1 handful fresh coriander
  • 1 lime, juiced
  • salt and black pepper

Instructions

  1. Brush the tortillas on both sides with oil, stack them up and set aside in an airtight container.
  2. To make the pickled onions, place the onion in a medium bowl and cover with boiling water. Drain immediately and cool with cold tap water. Drain again and return to the bowl with the vinegar and sugar. Set aside to pickle.
  3. For the salsa, halve the tomatoes and cut the onion in irregular size chunks. Place them on a baking tray with de-stemmed red chillies and the garlic. Grill them until blackened spots appear. Put the grilled vegetables in a blender with the rest of the salsa ingredients and blend them together. Taste and adjust the seasoning as you like.
  4. Grill the sausages and set aside and keep warm. In a grill pan, grill tortillas on both sides until bubbles appear. Stack them up and set aside wrapped in a clean tea towel.
  5. Fill the warmed tortillas with sausages, salsa, pickled onion and garnish with coriander.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
