Sesame beef stir-fry

Try this speedy sesame beef stir-fry with noodles from Isis Holt. Featuring beef mince, green beans, choy sum and spring onion, the dish is brought together with a simple stir-fry sauce made from oyster sauce, soy sauce and sesame oil. Garnish with spring onion and sesame seeds to serve.

Ingredients

  • ¼ cup soy sauce
  • ¼ cup oyster sauce
  • 1 tbsp brown sugar
  • 1½ tsp sesame oil
  • 400 g noodles
  • 2 tbsp olive oil
  • 500 g lean beef mince
  • 250 g green beans, trimmed and halved
  • 1 bunch choy sum, trimmed, cut to 10 cm lengths
  • 4 spring onions, thinly sliced
  • 1 tbsp sesame seeds, to serve

Instructions

  1. In a medium bowl, combine the soy sauce, oyster sauce, brown sugar and sesame oil and set aside.
  2. Cook the noodles according to the package directions.
  3. While the noodles are cooking, heat the olive oil in a wok or large frying pan. Add the beef mince and cook, breaking up any lumps, until browned.
  4. Scoop the noodles out of the boiling water and transfer to the pan with the browned beef, or reserve if the beef requires more cooking and add when browned.
  5. Add the green beans and choy sum to the noodle water and simmer until the beans are slightly softened, then drain and add to the wok with the beef and noodles.
  6. Pour the stir-fry sauce into the wok and stir until well combined. Serve the sesame beef stir-fry with the sliced spring onion and sesame seeds.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
