Mud crabs are widely prized for their sweet and succulent meat, and are an essential part of Asian and Australian cuisine. Upgrade your pasta night for two with this mud crab spaghetti dish from Joel Bennetts.

Ingredients

  • olive oil, for cooking
  • 2 large garlic cloves, finely sliced
  • 1 small red chilli, finely sliced
  • salt and black pepper, to taste
  • 200 g spaghetti
  • 120 g picked fresh mud crab meat (or any crab meat)
  • ¼ cup roughly chopped flat-leaf parsley
  • 1 lemon, halved
  • bottarga, to serve (optional)

Instructions

1. Bring a large saucepan of water to the boil for the pasta.

2. Heat a generous drizzle of olive oil in a large frying pan over low heat. Add the garlic, chilli and a generous pinch of salt and pepper and cook, stirring, for 10 minutes, or until fragrant.

3. Cook the pasta according to packet directions until just al dente. When cooked, transfer the cooked spaghetti and some pasta water to the garlic chilli mixture and mix well to combine.

4. Just before serving, stir through the crab meat, parsley and a squeeze of lemon juice. Season to taste with salt and pepper.

5. Divide between plates and serve with bottarga, if you like!

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
