Warm green bean salad

Gail Mabo’s sage advice for holding large family gatherings is to get everyone to bring a side-dish, while you work on the main meal. This warm green bean salad is the perfect dish to bring along to any gathering that cleverly renders streaky bacon down to make a smoky, bacon-flavoured dressing to toss with cherry tomatoes, green beans and coriander.

Ingredients

  • 360 g rindless streaky bacon, roughly chopped
  • 500 g green beans, trimmed
  • 250 g cherry tomatoes, halved
  • ½ bunch coriander, roughly chopped
  • 1 lemon, zest and juice


Instructions

1. Bring a medium saucepan of water to the boil over high heat. While the water is heating, heat a large non-stick dry frying pan over medium heat, then add the bacon pieces and cook, tossing occasionally, until crisp and rendered, then remove from the heat.

2. When the water is boiling, blanch the green beans until just tender, but still crisp, then drain.

3. Layer the cherry tomatoes, coriander, lemon zest and juice, blanched green beans and bacon (don’t forget the rendered bacon fat from the pan, as this forms the dressing!) in a large mixing bowl. Just before serving, toss gently to coat.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
